Brussels Sprouts are an underrated vegetable. In season during November, brussels sprouts can be found fresh at your local farmers' markets.

If you're lucky, the sprouts will still be attached to their long stalk. Many farmers' markets sell brussels sprouts this way, usually only a few days old. They are deliciously sweet when fresh, but become bitter when removed from the stalk and allowed to age.

If you get brussels sprouts from a grocery store, make sure the leaves haven't yellowed and the base is white. Unfortunately, many packers wash the sprouts in acidulated water to keep their base from turning brown. This technique works, but it doesn't stop the aging process from making the brussels sprouts bitter.
