Honey Mustard Cornish Game Hens

This is a delicious dish for two that is perfect for a romantic dinner. Having an entire hen to yourself makes it a special occasion, and the preparation and cooking couldn't be easier. This dish is also great for a dinner party, just multiply the recipe as needed.

2 cornish game hens, approximately 2.5 pounds
   sea salt and freshly cracked black pepper
4 juniper berries
2 bouquets garnis
4 cloves garlic, thinly sliced
1 lemon, cut into 8 wedges

2 tablespoons honey
2 tablespoons stone ground mustard

Preheat oven to 400° F. Wash birds and pat dry. Sprinkle the outside and cavity of each hen with salt and pepper. Place 2 juniper berries, 1 bouquet garnis, half the garlic, and 4 lemon wedges inside each hen cavity. Truss the legs together, and tuck the wings under the back. Place the hens in a roasting pan breast-side down. Cover the birds with foil and roast for 30 minutes.

Reduce heat to 350° F. Remove the foil from the hens and turn breast-side up. Mix the honey and mustard in a small bowl until thoroughly combined. Spoon the honey-mustard glaze over the hens. Continue cooking, uncovered, for 20 more minutes. Remove from oven and loosely cover the hens with foil. Allow to rest for 5-10 minutes. Serve entire hen on each plate with wild rice and asparagus.

wine suggestion
Spicy blockbuster red such as Australian Shiraz. Aromatic, flowery or fairly spicy dry white such as American Riesling; look to California or Washington State. Highly aromatic, grapy or spicy dry white; especially Gewürztraminer from Alsace, France.
