This is a delicious dish for two that is perfect for a romantic dinner. Having an
entire hen to yourself makes it a special occasion, and the preparation and cooking couldn't be easier. This dish is also great for a dinner party, just multiply
the recipe as needed.

2 cornish game hens, approximately 2.5 pounds
sea salt and freshly cracked black pepper
4 juniper berries
2 bouquets garnis
4 cloves garlic, thinly sliced
1 lemon, cut into 8 wedges

2 tablespoons honey
2 tablespoons stone ground mustard

Preheat oven to 400° F. Wash birds and pat dry. Sprinkle the outside and cavity of each hen with salt and pepper.
Place 2 juniper berries, 1 bouquet garnis, half the garlic, and 4 lemon wedges inside each hen cavity. Truss the legs together, and tuck the wings under the back.
Place the hens in a roasting pan breast-side down. Cover the birds with foil and roast for 30 minutes.

Reduce heat to 350° F. Remove the foil from the hens and turn breast-side up.
Mix the honey and mustard in a small bowl until thoroughly combined. Spoon the honey-mustard
glaze over the hens. Continue cooking, uncovered, for 20 more minutes. Remove from oven
and loosely cover the hens with foil. Allow to rest for 5-10 minutes. Serve entire hen on each plate with
wild rice and asparagus.

Spicy blockbuster red such as Australian Shiraz. Aromatic, flowery or fairly spicy dry white such as American Riesling; look to California or Washington State. Highly aromatic, grapy or spicy dry white; especially Gewürztraminer from Alsace, France.
