Morels are edible wild mushrooms that belong to the same species as the truffle. They grow in moist areas, around dying or
dead Apple, Elm, Sycamore or Ash trees. Morels are easily identified by their honeycombed, conical cap. The caps range in size
from 2 to 4 inches long, and their color can be anything between light tan to dark brown.
Morel mushrooms can be found fresh in the spring at specialty food markets and farmer's markets. However, dried morels are convenient to use year-round and have a more intense flavor that is smokier. They are prized for
their earthy, nutty flavor that pairs well with butter, garlic, and cream. Typically, the darker the morel the stronger the flavor.
