There's nothing more fragrant and warming than roasted garlic. It is great infused with olive oil, spread on good bread, or added to your mashed potatoes.
garlic
2 large whole heads of garlic
2 tablespoons extra-virgin olive oil
instructions
Preheat the oven to 375° F. Keeping the heads of garlic whole and unskinned, just cut enough of the tops off to expose the tips of the garlic cloves. Set the heads of garlic upright on a sheet of aluminum foil.
drizzle each head with a tablespoon of olive oil. Tightly wrap the heads in the foil and roast in the oven for about 20 minutes.
Remove from the oven and let cool enough to handle. Squeeze the garlic cloves from their skins and use immediately.
