Folklore states that the first tapa started in Spain when someone draped a slice of cured ham over their glass of sherry to keep away the flies. The Spanish word tapas literally means "covers" or "lids."
The tradition grew into little dishes of appetizers placed atop your glass at a Spanish bar. Today, tapas bars are at the center of all Spanish communities, from the rural agricultural villages to the most cosmopolitan cities.
Twice a day Spaniards flock to their local tapas bar, enjoying a few appetizers with a glass of chilled sherry or white wine. One can choose from a plethora of gastronomic delectables including: cheeses, omelets, salads, garlic, mushrooms,
chicken, cured hams, squid, shrimp, and scallops. The dishes range from small to large, cold to hot, simple to complex; a dish for every palate and every occasion.
