If you enjoy the taste of wild mushrooms, try using dried mushrooms in place of fresh! Use about one ounce of dried mushrooms for each 8-10 ounces of fresh mushrooms called for in a recipe.
Dried mushrooms keep much longer than fresh, and they add a more intense flavor to your recipes. Dried mushrooms need to reconstitute in a liquid such as water, wine, or broth. The reserved soaking liquid can substitute any liquids called for in your recipe. For example, if your recipe calls for a cup of white wine, soak your dried mushrooms in the wine. This will heighten the mushroom flavor in your recipe.

Place dried mushrooms in a small bowl. Pour liquid over the mushrooms and let sit for 10 to 15 minutes to reconstitute. Lightly squeeze the liquid out of the mushrooms over the bowl. If using shiitakes discard the stems, they are too woody to be edible. Slice the mushrooms, and set aside. Place a coffee filter in a second bowl and pour in the mushroom-liquid mixture to remove any sediment. Carefully remove the filter, and reserve liquid for use in your recipe.
